Amberjack, locally known as Saafi, is a prized deep-sea fish with rich, buttery flesh and a melt-in-mouth texture when cooked. The firm, pinkish meat is fattier than most white fish — delivering incredible flavour in grilled steaks, sashimi, pan-seared preparations, and rich curries.
