Lane Snapper, locally called Kanulcha, is a beautifully coloured reef fish with sweet, delicate white meat. Smaller than Red Snapper but equally flavourful, Lane Snapper is best enjoyed pan-fried, grilled whole, or in a light curry where its subtle sweetness can shine.
